On the contrary, coffee beans that have been sitting around for a while will tend to be more oily because when exposed to oxygen over time, the beans dry out and their internal oils migrate to the surface. Sometimes dark roasts or decaf coffees will be oily when fresh, but not light or medium roasts. I hope this helps!
